Mike's Fall Quinoa with Roasted Butternut Squash

Ingredients:

  • 2 cups cooked Quinoa
  • 1/2 cup crushed pecans
  • 1 Butternut Squash
  • 1/2 cup chopped Kale
  • 2 tbs Magic Mike's Original Blend
  • 2 tbs olive oil

  • Dressing:

  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tbs honey
  • 1/2 cup chopped Kale
  • 2 tbs Magic Mike's Original Blend
  • Mike's Grilled Honey Lime Chicken
  • Instructions:

    Peel and cube squash. Scatter cubes on a baking sheet and drizzle with olive oil. Evenly spinkle Magic Mike's. Roast in a 425° oven for 30-40 minutes. Allow to cool completely. Add pecans and kale to cool quinoa. Spoon the squash into the salad. Top it off with Mike's delicious salt free dressing and enjoy!
